a few people connect with their laptops, i was wondering if there can be something installed to track what websites they visit witout having to install anything on their laptops/computers etc.

Depending on your router, some have a built in logging feature. They are not robust, bu they will tell you what ip is visiting what websites. Look in your router settings to see if you have it.
You can use Wireshark to sniff the network, but this is probably too difficult for you. ISA server also has some great tools, but I don’t know if you want to spend large coin for a server package.
What is your goal?
Are you wanting to know what resources are being used? Network monitoring tools may be what you seek, though many are enterprise level and very costly. Others may be very complex to use or setup depending on what you are looking for.
Are you spying/snooping on them? Nanny software or corporate big brother packages are probably your best bet, these will log everyday tasks by the user. Symantec among others has some offerings here or guardian or netnanny, etc. etc.
